Alright, so all day at work I was so excited because I was going to come home, get a grocery list going for my next dish, cook it and blog about it.. hoping it would be as good as the last. But towards the end of my shift, I started feeling a sore throat coming on, getting warmer and warmer by every minute or birthday song we had to sing to every other guest that sat in our restaurant. When I finally got home, I walked into loud commotions coming from my mother and aunt in the kitchen. I knew then and there I wasn't going to be able to cook tonight. Mom was cracking the fresh crab her and dad caught the day before, thank you Oregon coast for making crab available to catch almost everyday of the fall and winter season! Mom informed me dad was going to make his famous crab omelette's tonight...mmmm.. they are so nummy. If this were true (which it didn't end up being) I'd have to have him make me egg white crab omelette's with low fat cheese to stick to my healthy eating. Everything in my dad's omelette's are fresh and good for you except the egg yolks and cheese. He puts dried mushrooms (that we pick fresh in the fall), green onions, a little bit of garlic, tomatoes, cheese and of course fresh crab.
I was kind of relieved that he was going to do the cooking tonight due to my mysterious illness that came out of nowhere, but a little disappointed because I've come to enjoy blogging about my new healthy dishes I'm discovering.
Well, it turned out we didn't get our delicious crab egg white omelette's after all. Dad came home from golfing late with my uncle and cousin, wining because he was starving at that moment, so mom made us the left overs from steak taco night I'd blogged about in day two. It was good, but we've been eating them for a few days now so I was hoping I'd have something different. I guess I'll have a great breakfast before work tomorrow and then I can make my next dish, Shrimp and avocado rice bowl (you can find the recipe at www.fitnessmagazine.com) and blog about it tomorrow night! OOOOOhh! I am so stoked! Look up this dish and make it with me if you can, then we (if anyone is reading this) can compare our flavors. You know... I'm thinking I'm going to add scallops to this even though it doesn't call for them. I've been craving them and it sounds like it will go good with the dish. Don't worry, it will still be healthy and delicious and I'll make part of it without scallops to make sure it turns out as the recipe orders.

Day 2: Steak-and-Pepper Tacos
So... today is day two of my new found adventure of writing a blog about recipes I get from health magazines and telling you, the readers whether or not healthy food really tastes good. This one is all about steak and pepper tacos out of the February 2010 Fitness magazine. You can get this recipe by going to www.fitnessmagazing.com. I highly recommend this recipe giving it 5 stars as you my say. From the words of my gay work husband, "It was FABULOUS!"
I do have to be honest about a few things, 1.) My mother, being an amazing cook, probably even better than me ( saying that because she'll probably read this) had to prepare this recipe due to the fact that I got called into work. I can guarantee she followed the steps, tweaking the recipe a bit as I informed her to do. 2.) I tweaked the recipe a bit. I had a similar main ingredient already thawing in the fridge.... elk steak. As you home cooks know sometimes you've gotta just use what you have. I can guarantee this recipe would still be amazing if you used the flank or hanger steak it called for. In the future to change it up a bit I'd even use chicken, shrimp, fish or scallops. That would take this dish from 5 stars to 6! 3.) I really don't like fajitas, and this being similar to that wowed me, so you know it had to be good. You could taste each ingredient as it's own, but at the same time they all work together to create a fiesta on your palate. The charred peppers, onions, avocado and corn brought out a sweetness fighting off the spiciness of the jalapenos and chile powder. The lime juice not only tenderized the meat but brought out the freshness of each item, and the corn tortillas tied everything together with a smooth savory flavor.
I paired this meal with a Cabernet Sauvignon from Cali. making this great dish even better as most wines do. What makes this dish even healthier is you have no need for a side dish, having your veggies and carbs built into it!! Just be aware, you'll want to scarf down more than a serving size because its soooooo good so drink lots of water and treat yourself to some fruit to feel your belly.
This dish is great for having dinner parties and your guest won't even know it's healthy for them too.... that will be our little secret or the topic of conversation while eating this increditable meal!!!

Inspired by Julie and Julia... Day 1
Hello, my name is Suzy. I went to school to be a Chef in Savannah, Ga. so please don't hold me to correct grammar or spelling because the majority of us Chef's or cooks in my case don't really care much about that. I went to school off and on to get my degree in culinary arts, I dropped out as soon as I realized I could learn so much more in the field. I worked under two CIA grads. and learned how to cook gourmet style in a matter of months.
Being that I was in the south I of course cooked many of fried foods and turned the healthiest of food into pure fat with all that butter. Now that I'm back in my home state of Oregon, where they pride themselfs on being healthy and organic I'm wanting to turn my cooking style around to that where I can be healthy and fit again.
I got the idea to write a blog about my experience after I watched Julie and Julia. I love Julia Childs and appriciate what she has taught us Americans about cooking. I would've loved to do what Julie Powell did by cooking every recipe in Julia's first addition but it was way too heavy, fattening and very bad if you are trying to get in shape. So tonight as I sat down on the couch I looked over at my coffee table and what did I see, the Fitness magezine that we get every month. We each look at it for different reasons, my dad for all the hot chicks, and I guess my mom too but not in that way, she wishes she could have a body like them or wishes she could be their age again, and me I'd like to have that body, I am their age but I look through just to find the healthy recipes. The recipes sound so good? I've tried to make a few from cook books that were made for dieting or eating healthy, they just never tasted right? Maybe just maybe the recipes in the Fitness mag will be good actually delicious? So that's my goal. I'm here to test all these recipes in this mag and tell you the readers of the mag, at home mom's or people just trying to be healthy if healthy food really tastes good.
